Remember when I said I’m well over slice? Didn’t really happen, did it?
This slice is pretty basic and from what I remember, sat alongside Caramel Crunchy and Apricot Fudge on the tray of sweet treats I remember my Mum putting together for our babysitters as a child. How we envied that tray….occassionally my sisters and I managed to convince the babysitter to share with us 🙂
A short little post for a very quick and easy recipe. Most of these ingredients you are likely to already have in the cupboard so simple to make at short notice. You could also add some brandy to the base if you’d like to jazz it up a bit!
Chocolate Coconut Fudge Cake
- 115 grams butter
- 1/2 cup sugar
- 1 egg
- 1/2 cup sultanas
- 1 tbsp cocoa
- 1 tsp vanilla essence
- 1 packet of biscuits, crushed
In a pot, dissolve the butter and the sugar. Add the egg and a tablespoon of cocoa. Cook. Take off the heat and add crushed biscuits and sultanas. Press into a greased tin and place in the fridge. When cool, ice with chocolate icing.
